Oatmeal Chocolate Chip Muffins

Mmmm…I woke up with a craving for these oatmeal muffins this morning. I love them and they are so very easy to whip up in the morning for a fun but hearty and healthy breakfast. I always add walnuts to them but ran out today so I added flaxseeds instead. I recommend soaking the oatmeal in the milk for 10-15 before mixing the batter.

The kids gobble these up so fast…I love that I can use coconut oil and wheat flour and they are so tasty and filling!

i am trying this recipe as i write this comment, however, instead of walnuts I am using the left over almond meal from making almond milk–can’t wait to try them!

  2. This sounds so easy! I prefer muffin recipes that use oil because it seems to yield a good crumb as well as making for easier clean up.

Now you have my attention! Two of my favorite flavors together, in one dessert! Will have to make this soon. I remember the first time I baked oatmeal-chocolate chip cookies. They were so ugly on the pan! I wanted to cry. Luckily, they ended up looking fine once they were completely baked, ha ha!

    1. Amy that’s so funny! I absolutely LOVE oatmeal and chocolate chip anything!

I’m not usually a oatmeal fan, but maybe with the chocolate I’d like it a bit more.
